Portions served (ie 4-5 people)
2 Large Aubergines
1 Parsley bunch
2 Lemons Juice
3 Gloves of Garlic
Roast the Aubergines in the over or on the stove then peel and dice.
cut the tomatoes and the parsley and chop the Garlic mix together with the Aubergine and the lemon juice and salt
decorate with olive oil and pomegranate seeds.
